chiffon cake

the trick is all in the whipping of the egg whites and not over mixing into the batter!

Upper left and clockwise – banana nut, mocha nut, date spice, and lemon coconut.

these are hard cakes to make, especially when you are mixing in solids at the end like on upper left with the bananas.  From the lopsidedness of things, it does look like I fell short a bit.  the rest of the flavors did no need such big chunks to be added and so the integrity of the egg white was held better.
