Pumpkin Spiced Cheesecake

Fall is the season for Starbuck’s Pumpkin Spiced Latte.  There is even a whole advertising campaign for it.  Personally, I don’t care for the “PSL” but I do love this recipe from Cook’s Illustrated for Pumpkin Spiced Cheesecake!

The crust is graham cracker with cinnamon, ginger, cloves, and nutmeg.  The filling has all those plus some nutmeg.  Baked in a steam bath until it sets up just right, the final product is a light and delicious cheesecake that is sure to please any crowd!

In the cookbook, there is also a variation for a bourbon spiced pumpkin cheesecake with pecans mixed into the crust.  This is equally delicious.   🙂
