To go with this week’s Root Beer Bundt Cake (see post), I made this delicious Pistachio Bundt Cake!
As I mentioned in my post “Strawberry Style”, one of my favorite cake cookbooks is Kiss My Bundt by Chrysta Wilson. Named after the LA bakery that has since closed, the recipes in this book are all winners. I have made every single one! But my favorite is this pistachio bundt. In the batter are 2 packages of instant pistachio pudding mix, which really allows this cake to take on a delicious moistness with a lot of flavor! The outside browns beautifully and the inside stays a cool green.
