Raspberry Crumb Breakfast Bars

Recipe based on one found in Baked: New Frontiers in Baking by Matt Lewis and Renalto Poliafito.

Most of the time, these type of crumb bars have a lot of oatmeal in the mix and the crusts are hard and crumbly like a granola bar.  But this bar has a beautiful light and fluffy crust that pairs wonderfully with the fruit mixture sandwiched in between.  I didn’t have enough raspberries the day I made this and so I thought made it even more delicious!
