In Baked: New Frontiers in Baking by Matt Lewis and Renato Poliafito, there is a recipe for a “grasshopper cake”. It is a chocolate cake base finished with a frosting made from scratch with chocolate wafers and chocolate mint candy (such as Andes©) mixed into it. Big cakes are hard for me to share with friends and coworkers during the week, so I decided to convert the recipe into cupcakes instead.
I baked the chocolate cake layers as cupcakes and topped it with a mint flavored buttercream. I added green dye, as to signify that there is mint inside. I then topped each cupcake off with an Andes© mint! Since the cake portion is small, crushing wafers into the frosting would have been too much topping. I liked the way this turned out and it is delicious too!
