Last week, I was planning to make the Heartland Turtle Bars from Baked Explorations by Matt Lewis and Renato Poliafito.
The recipe calls for a oatmeal shortbread cookie base with caramel in the middle. Using only brown sugar in the batter, it’s also got chocolate chips and pecans too. I didn’t feel like getting down and messy with caramel filling and so I added a few eggs into the batter to make the shortbread into more like oatmeal blondie.
