A while back, I baked some whoopie pies for my friend’s daughter’s birthday party (see previous link: https://justcallmequeen.wordpress.com/2015/04/17/party-time/). This week, I decided to try out the whoopie pie recipes in Baked Explorations by Matt Lewis and Renato Poliafito.
They’ve got two types: chocolate and red velvet.
The chocolate ones have coffee and espresso powder in the batter to enhance the chocolate of cocoa powder with buttermilk and canola oil to give it moisture. It’s not as cake-y as the recipe I used last time and the cookie tasted a lot like a big homemade oreo. 🙂
The red velvet one has half as much baking soda and powder as the chocolate one but an extra egg. It also uses a combination of butter, oil, and shortening instead of just oil, as well as a combination of brown and granulated sugar. The end cookie was crisp on the outside and cake-ier on the inside. I used the same vanilla frosting to fill both of them and they turned out pretty great!
