Salted Caramel Brownies

This week, I decided to make two brownies from my Baked books by Matt Lewis and Renato Poliafito.  The Baked brownies have been a long time favorite of everyone from Oprah and the Today™ show to my staff at work.

img_8024  They are cake-y and decadent with 5 eggs in the batter.  The chocolate is rich from both melted dark chocolate and cocoa powder with instant espresso to bring out it’s flavor.

In the book, Baked Exploration, there is a recipe for a “sweet and salty brownie”.  It’s basically a sandwich made by the classic brownie sandwiched around salted caramel.  Like in my previous post about the turtle oat blondies (, I don’t like the recipes where caramel comes oozing out from a cookie sandwich.  So, I baked the caramel with flakes of fleur de sel onto the top of the brownie.
