I am quite active on Instagram® and follow a lot of people. I’m drawn to the colors and art of a photogragh – especially with fashion and food.
Last week, I was drawn to a post by the Food writers at the New York Times® for a Pistachio-Lemon Bar. The recipe is simple but the flavors were delectable. I doubled the crust recipe but tripled the filling recipe to make these two pans:
There are pistachios in the crust and the filling. I used roasted and salted pistachios and so halved the requisite amount of salt. The end product:
Probably my favorite lemon bar so far. It’s not terribly sour and the pistachios add a nice texture and flavor balance in the filling. So yummy.
